So, every allergy free recipe that I make for us, Erica won't eat. I think it's not bad, Lynds eats a little of it and Dus will try it and then make comments about it. So I guess they aren't real good but we need to eat them with an open mind. Erica loves the cookies that I bought, but not the ones I make. I feel bad am I really that bad of a cook.

Just got a knock at the door. Yeah, a big box of Betty Crocker Gluten Free stuff. I'm excited to see the different stuff, though I will have to change the directions for Erica, she can't have the eggs or the butter. I can use Egg Replacer for the eggs but need to find a butter replacement first. Heard good things about the Spectrum Shortening as a butter replacement, though it's not available locally. Will have to order online or head up the road to WholeFoods or TraderJoes.
Will let you know how they come out as soon as I can.

Happy 4th!
We are having a BBQ here and then headed to town for the festivities, parade and fireworks! Hope Erica will watch the fireworks this time, she hated them at Disney. Lynds has been so excited today that she just crashed for an early nap!

WOW!
We took Lynds to the movies today to see Ice Age, she really didn't like it. Wanted to head out after about 30 minutes. I had to hold her for most of it.
I just finished baking my first attempt to Allergy Free cupcakes for Erica. They are pretty good, a different texture than a normal cake but not bad. The frosting is great, just like Mom-mom's chocolate frosting, Yum! The frosting isn't exactly allergy free, it does have soy, will have to really look hard for a dairy, soy free margarine or shortening.

FIrst Blog
Howdy, this is my first attempt to a Blog. I'm sitting watching How I Met Your Mother with Lynds and not thinking it's funny.
The reason I started this was to keep track of my journey through Erica's food allergies. So we know that she is allergic to Eggs, Peanuts, Shellfish, Wheat, Dairy, Peaches, Chicken, and Soy. So I thought I was doing well, even made some brownies that aren't that bad. But she has had a super bad day and now is covered in a rash. Don't know what it could be except blueberries or strawberries which she has been eating quite a bit.
